I'm going to a Red Wings game at which Dennis Eckersley will be signed autographs, one per person. My girlfriend will be accompanying me so that leaves me 2 things to get signed. I'm a HUGE Eck fan so I want to get some really memorable stuff signed. I've narrowed it down to the following:
1976 Topps RC
1983 Topps (a AUTO set I'm building but can't possibly finish)
1991 Topps Desert Shield
OMLB
Athletics Hat
SI cover reprint (http://i.cnn.net/si/si_online/covers/images/1990/1022_large.jpg) (this issue came out on my birthday)
Any other suggestions or recommendations?

For starters, I would get the SI Cover signed (reprint or not), then I would go with a card... that's just my opinion...

If it was me, I'd go with a ball. I'd try to find an OAL ball or maybe a World Series ball. My second choice would be a HOF gold plaque postcard, and my third choice would be a Perez-Steele postcard. JMO.

I'd love to get an original copy of the magazine, but all the ones on eBay have address tags. If I could find one without, I'd pay top dollar.

Based on your choices that you listed, I would go with the SI Cover Reprint and the OMLB. However, I do agree that I would try to find a World Series ball from one of the World Series that the A's won and have it signed. I have a World Series ball from 1995 (the year the Braves beat the Indians) which is signed by Greg Maddux. It's one of my favorites. I also have a 1995 World Series program signed by Tom Glavine with "1995 WS MVP" inscription. Also one of my favorites.

That might help you out... It doesn't have a tag, and I think back then SI still used the actual label for addresses rather than printing directly on to the magazine like they do now.
Hope it helps!
