How much would a player's signature be worth if it's just written on a piece of non-acidic paper instead of a baseball card?

It is less, I can tell you that. There's a store in Cooperstown, close to Doubleday Field, that sells vintage autographs of all types, and autos of HOF players written on note cards or slips of paper can be had for only a few dollars each. For one thing, plain paper holds zero connection to the player compared to that player's card, photo or even a ball or cap.
