Shorten your swing and just focus on making contact and putting the ball into play. No need to try and jack the ball.

today we were playing a game against a dominant pitcher.. and he got 2-0 on me, so I took.. when I was 2-1 I fouled a ball off and I was 2-2.. the whole game he was throwing junk so I looked for a fastball and tried to foul off anything that wasn't, you just have to shorten up.. ALWAYS look for a fastball and adjust to an offspeed pitch
-- Shorten up.. look for a base hit not a homerun, be more careful of the strike zone and if theres something close just try to foul it off
what are the best adjustments you should make with 2 strikes ?

Tony Gwynn once wrote/said if you can hit better by making adjustments with two strikes than you should make those adjustments all the time.

All you need to do is concentrate on hitting the ball on the ground. DO NOT attempt to hit a homerun or do to much.

I know you must have heard this advice from many of your coaches. It is flawed in more ways than one. Following this advice will produce results in 10U ball. Once you get past 10U ball, the results will quickly taper off to poor performance. By then, you will have ingrained swing mechanics that will be nearly impossible to change.
How many times have you heard someone tell you to swing down on the ball?
It is maddening what some of the youth coaches teach the kids.

swing the same way AS ALWAYS but expand your own strike zone a wee bit

Don't even think about it. Trying to hit the ball on the ground is the number 1 reason for pop-ups, and that is a FACT. Even if you do hit it on the ground theres always the risk that you will ground out unless you hit it very hard (unlikely when your swinging down).
No offense, but this is bad advice.

I must say, all of my homeruns this season were all on two strike counts, and all I did was choke up, move closer to the plate, and crouch a bit. I also shortened my swing down and slapped the ball where it was pitched. Just look fastball, and if u get something else look to foul it off somewhere. Also ANYTHING THATS CLOSE TO THE STRIKE ZONE, MUST BE SWUNG AT. A-C: ANYTHING CLOSE! Most umpires that arent umping the pro leagues arent perfect, and most will call strikes that seem close in youth leagues (even in my high school league). Tyr your best not to get called out on strikes. And above all, once you get two strikes, you are in a defensive mode, not offense. Just look to put the ball in play somehwhere hard on a line.

Dont even think about the count. If it's a strike, hit it. I think the reason that most people get psyched out with 2 strikes on them is because they think about it too much. Don't worry about it, and just think about making contact.
